food experiment

I tried something slightly different for dinner last night.

Due to the weather, or my own insanity, I have been craving soup a lot lately. A comment from devilmuse a little while ago got me thinking.

I made a light "cream" soup based on my dad's old recipe for potato soup.

It had;
potatoes
broccoli
onion
mushrooms
silky tofu
chicken stock
skim milk

Cook it all up until the potatoes are done, then puree with a hand blender. It's only seasoned with salt and pepper. I think next time I may use more tofu, since I think it needed more protein, but overall, I was pretty pleased with it.

dump everything together, cook until tender, then blend? whoa, that's really easy. i may have to try this recipe (minus the mushrooms, unless tod really wants them). any recommendations on proportions of stuff?

I left the broccoli and tofu out until the potatoes were cooked, so they didn't get overcooked, and I sauteed the onion and mushroom a bit before adding the liquid and potato, but other than that, yeah, just simmer it all together until it's all soft and mushy, then blend.

In the future, I'd add in some leeks to round out the flavour. It might also be good with asparagus, too.

On proportions - I used 3 potatoes, one onion, 2 crowns of broccoli, 6 mushrooms and one container of tofu. I used about a bag of milk and one box of stock, neither of which might be useful measurements for you, but I don't know off hand how much they hold. I would add a second tub of tofu, and some leeks, but other than that I was happy with it.
